A creamy and protein-packed Peanut Butter Chocolate Cottage Cheese Pudding that's easy to prepare and perfect for a healthy snack or dessert. Combining the rich flavors of peanut butter and cocoa powder with the smooth texture of cottage cheese, this pudding is both delicious and nutritious.

Ingredients

Main Ingredients

  • 2 cup cottage cheese (full-fat or low-fat)
  • 2 scoops peanut butter flavored protein powder
  • 3 tbsp unsweetened cocoa powder
  • 1 ½ tbsp powdered erythritol or stevia (to taste)
  • 1 tsp vanilla extract
  • 2–4 tbsp unsweetened almond milk (to thin, as needed)
  • Optional: pinch of salt

Instructions

  1. Combine ingredients: Place cottage cheese, peanut butter flavored protein powder, unsweetened cocoa powder, powdered erythritol or stevia, vanilla extract, almond milk, and a pinch of salt (if using) into a blender or food processor.
  2. Blend: Blend all the ingredients until smooth and creamy. Pause as needed to scrape down the sides to ensure even mixing.
  3. Adjust consistency and sweetness: Taste the pudding and add additional almond milk to thin the consistency or extra sweetener to taste, then blend again if adjustments are made.
  4. Chill (optional): For a firmer texture, refrigerate the pudding for 30 minutes before serving. This step is optional and can be skipped if you prefer a softer pudding.

Notes

  • Use full-fat cottage cheese for a richer and creamier texture or low-fat for fewer calories.
  • Substitute almond milk with any other plant-based milk or regular milk based on preference.
  • Adjust sweetness with your preferred sweetener: erythritol, stevia, or another powdered sugar substitute works well.
  • Adding a pinch of salt enhances the chocolate and peanut butter flavors.
  • This pudding can be enjoyed immediately or chilled for a thicker consistency.
