Make-Ahead Breakfast Sandwiches are a convenient and delicious solution for busy mornings. Featuring English muffins layered with crispy bacon or sausage patties, scrambled eggs, and melted Gouda cheese, these sandwiches can be assembled in advance and frozen for up to three months. They reheat quickly in the microwave or oven, making them a perfect grab-and-go breakfast option.

  • 3 slices of bacon, cut in half
  • 3 sausage patties

  • Butter or cooking spray, for greasing the pan

Instructions

  1. Cook the bacon: In a skillet over medium heat, cook the bacon slices until crispy. Remove the bacon and drain on paper towels. Set aside.
  2. Cook the sausage patties: In the same skillet, cook the sausage patties until fully cooked through. Remove and drain on paper towels. Set aside.
  3. Cook the eggs: Lightly grease a small non-stick pan or a pan with 4 egg rings with butter or cooking spray and heat over medium heat. Crack one egg into each ring or into the pan if rings are not used. Season with salt and pepper. Cook until the whites are set and the yolks reach your preferred doneness, about 3-4 minutes for runny yolks or an additional 1-2 minutes after flipping for firmer yolks. Remove eggs and let cool slightly.
  4. Assemble the sandwiches: Place the bottom halves of the English muffins on a clean surface. Add a slice of cheese to each muffin half. For half of the sandwiches, add a cooked egg and two bacon halves; for the other half, add a cooked egg and a sausage patty. Top each with the muffin tops.
  5. Wrap and store: Wrap each sandwich individually in parchment paper. Place all wrapped sandwiches into a large Ziploc bag or airtight container. Freeze for up to 3 months.
  6. Reheat sandwiches: To serve, unwrap the sandwich from the parchment paper and wrap it in a paper towel. Microwave on high for 1-2 minutes until heated through. Alternatively, reheat in a preheated 350°F (175°C) oven for about 20 minutes.
