A creamy, cheesy keto-friendly casserole featuring tender broccoli and cauliflower florets cooked in a rich blend of cream cheese, cheddar, and savory spices. This comforting dish is perfect for low-carb meal plans and can be enhanced with crispy bacon topping.

Ingredients

Vegetables

  • 2 cups broccoli florets
  • 2 cups cauliflower florets

Cheese Mixture

  • 1 cup shredded cheddar cheese
  • 1 cup cream cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth

Seasonings

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Optional Topping

  • 1/2 cup crumbled bacon

Instructions

  1. Prepare Cheese Mixture: In a large bowl, combine the softened cream cheese, heavy cream, chicken broth, garlic powder, onion powder, salt, and pepper. Whisk until the mixture is smooth and well blended.
  2. Combine Vegetables and Cheese Mixture: Place the broccoli and cauliflower florets into the crockpot. Pour the cheese mixture evenly over the vegetables and stir gently to coat them.
  3. Add Toppings: Sprinkle shredded cheddar cheese over the top of the vegetable and cheese mixture. If desired, add crumbled bacon for extra flavor and texture.
  4. Cook the Casserole: Cover the crockpot with the lid and cook on low heat for 5 hours or on high heat for 3 hours. Cook until the vegetables are tender and the cheese is fully melted and bubbly.
  5. Serve Warm: Once cooked, serve the casserole hot as a satisfying keto-friendly side dish or main course.

Notes

  • To keep the dish vegetarian, omit the bacon topping.
  • If cream cheese is not softened, microwave it in short bursts to soften evenly.
  • For extra creaminess, stir the casserole halfway through cooking if possible.
  • Substitute chicken broth with vegetable broth for a vegetarian variation.
  • Adjust salt and pepper according to personal taste and dietary needs.
