Tender and flavorful grilled lamb chops marinated in a fragrant rosemary garlic mixture, perfect for a quick and elegant dinner.

Ingredients

Marinade and Meat

  • 4 lamb chops (about 1 inch thick)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • Salt, to taste
  • Black pepper, to taste

Serving

  • Lemon wedges, for serving

Instructions

  1. Marinate the Lamb: In a small bowl, combine the olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this marinade thoroughly over both sides of the lamb chops. Let the lamb chops sit at room temperature for at least 30 minutes to absorb the flavors.
  2. Preheat the Grill: Heat your grill to medium-high heat to ensure a nice sear and proper cooking of the lamb chops.
  3. Grill the Lamb: Place the marinated lamb chops on the preheated grill. Cook each side for about 5 minutes to achieve medium-rare doneness, or continue grilling until your desired level of doneness is reached. Remove the chops from the grill and allow them to rest for a few minutes to retain their juices.
  4. Serve: Transfer the rested lamb chops to a serving plate. Serve warm with fresh lemon wedges on the side. For a complete meal, pair with roasted vegetables or a fresh salad.

Notes

  • For more tender lamb chops, marinate for up to 2 hours in the refrigerator.
  • If you prefer well-done lamb, grill for an additional 2-3 minutes per side.
  • Fresh rosemary is preferred for the best flavor, but dried rosemary can be used in a pinch (use half the amount).
  • Allow the lamb chops to rest after grilling to keep them juicy and flavorful.
  • This marinade can also be used for other cuts of lamb or beef.
