Ingredients

Dough:

  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm water
  • 1 tablespoon sugar
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil

Filling:

  • 1 tablespoon olive oil
  • 2 large onions, thinly sliced
  • 3 cups fresh spinach
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup marinara sauce
  • Salt and pepper to taste
  • 2 tablespoons nutritional yeast (optional, for topping)

Instructions

  1. Activate yeast: In a small bowl, mix the active dry yeast, warm water, and sugar. Let the mixture sit for 10 minutes until it becomes foamy, indicating the yeast is active.
  2. Prepare dough: In a large bowl, combine the all-purpose flour and salt. Add the yeast mixture and olive oil. Knead the ingredients together for 8 to 10 minutes until you achieve a smooth dough. Cover the dough and let it rise in a warm place for 1 hour until it doubles in size.
  3. Caramelize onions: While the dough rises, heat 1 tablespoon of olive oil in a pan over medium-low heat. Add the thinly sliced onions and cook them, stirring occasionally, for 20 minutes until they become golden brown and caramelized.
  4. Cook spinach mixture: Add the minced garlic, fresh spinach, dried oregano, and red pepper flakes to the caramelized onions. Stir and cook for another 3 minutes until the spinach wilts. Season the mixture with salt and pepper to taste and then allow it to cool.
  5. Preheat oven: Preheat your oven to 375°F (190°C) and grease a baking dish to prepare for the pizza rolls.
