Ingredients

For the Tarts

  • 1 sheet puff pastry, thawed if frozen
  • 1 Red Delicious apple, peeled, cored, and cut into thin slices
  • 1/8 cup (25g) brown sugar
  • 1/8 cup (25g) granulated sugar
  • 4 tablespoons (60g) unsalted butter
  • 1/2 teaspoon cinnamon (optional)
  • A pinch of salt

  • Confectioners sugar, for dusting
  • Whipped cream or vanilla ice cream (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and prepare a round baking pan or oven-proof skillet about 9 inches in diameter.
  2. Make Caramel Base: In the pan or skillet, melt the unsalted butter over medium heat. Add brown sugar, granulated sugar, cinnamon, and a pinch of salt, stirring frequently until the sugars dissolve and the mixture begins to bubble.
  3. Caramelize Apples: Arrange the apple slices tightly in a circular pattern over the caramel mixture. Cook over medium heat for about 10 minutes until the apples are tender and caramelized, being careful to avoid burning the caramel.
  4. Prepare Puff Pastry: While apples caramelize, roll out the puff pastry on a lightly floured surface and cut into 6 even rectangles.
  5. Cool Caramelized Apples: Once apples are caramelized, remove the pan from heat and let the apples cool for a few minutes to set the caramel slightly.
  6. Assemble Tarts: Place 1 square of butter on a baking sheet, then add 4 slices of caramelized apple on top. Next, place a puff pastry rectangle over the apples and press the edges down with a fork to seal.
  7. Bake Tarts: Bake the assembled tarts in the preheated oven for 30 minutes or until the puff pastry is golden and puffed.
