Ingredients

Meat and Aromatics

  • ½ lb chorizo
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 5 chipotle peppers, chopped

Spices and Seasonings

  • 1 teaspoon cumin
  • 1 ½ teaspoon salt
  • 1 teaspoon black pepper

Liquids and Puree

  • 15 oz chicken or beef broth
  • 2 cups pumpkin puree
  • ¼ cup heavy cream

Instructions

  1. Cook Chorizo: Add chorizo to a soup pot and heat over medium heat, simmering and stirring for about 5 minutes until browned. Scoop out the chorizo into a bowl and carefully wipe most of the rendered fat from the pot with paper towels.
  2. Sauté Onions: Add the chopped onions to the pot and sauté until fragrant and translucent. Drain excess fat from the chorizo bowl and add the chorizo back to the pot with the onions.
  3. Add Garlic and Peppers: Stir in chopped garlic and chipotle peppers, cooking briefly to release their aroma.
  4. Simmer Soup: Pour in the broth, pumpkin puree, cumin, salt, and black pepper. Stir to combine thoroughly and let the soup simmer on medium heat for about 10 minutes to develop flavors.
  5. Finish with Cream: Add the heavy cream to the soup, stir well, and then turn off the heat.
  6. Serve: Ladle the soup into bowls and garnish with the reserved pieces of chorizo and chopped green onions for added texture and flavor.
