These Spiced Molasses Cookies are soft, chewy, and packed with warm spices like cinnamon, ginger, and cloves. Perfectly sweetened with molasses and brown sugar, they offer a delightful rich flavor and a slightly crisp edge, making them a cozy treat for any season.

Ingredients

Cookie Dough

  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/4 cup molasses
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Coating

  • 1/4 cup granulated sugar (for rolling)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper to prevent sticking and ensure even baking.
  2. Cream Butter and Sugar: In a large bowl, cream together the softened unsalted butter and brown sugar until the mixture becomes light and fluffy, about 3-5 minutes using a hand or stand mixer.
  3. Add Molasses and Egg: Beat in the molasses and the large egg until fully combined and smooth.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, ground cinnamon, ground ginger, ground cloves, baking soda, and salt.
  5. Combine Wet and Dry: Gradually add the dry ingredients into the wet mixture, mixing until a cohesive dough forms without overmixing.
  6. Shape and Roll: Roll the dough into balls about 1 to 1.5 inches in diameter and then gently roll each ball in the granulated sugar to coat evenly.
  7. Arrange on Baking Sheet: Place the sugar-coated dough balls on the prepared baking sheets, spacing them about 2 inches apart to allow spreading.
  8. Bake: Bake in the preheated oven for 10 minutes or until the edges are set and the cookies look slightly cracked on top.
  9. Cool: Let the cookies cool on the baking sheets for 3-5 minutes before transferring them to wire racks to cool completely, ensuring they firm up properly.

Notes

  • Use parchment paper or silicone mats to prevent sticking and make cleanup easier.
  • For chewier cookies, slightly underbake and allow them to cool on the baking sheet.
  • Store cookies in an airtight container at room temperature for up to one week.
  • Molasses gives these cookies their characteristic deep flavor; avoid substituting with other syrups for best results.
  • To enhance spice flavor, toast the ground spices lightly in a dry pan before mixing.
