Ingredients

Main Ingredients

  • 1 package refrigerated pizza dough (or homemade pizza dough)
  • 1 1/2 cups marinara sauce or pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup pepperoni slices (or your choice of toppings such as sausage, mushrooms, bell peppers, olives)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • Olive oil for brushing (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it's ready for baking the pot pies.
  2. Prepare Ramekins: Lightly grease 4-6 small ramekins or oven-safe bowls, depending on their size, to prevent sticking and make removal easier.
  3. Roll Dough: On a lightly floured surface, roll out the pizza dough to about 1/8 inch thickness for a thin, flaky crust.
  4. Cut Dough: Cut the dough into circles or squares large enough to fit into your ramekins, leaving about 1 inch of dough hanging over the sides for sealing the pies.
  5. Line Ramekins: Gently press the dough into the bottom and sides of each ramekin to form the crust base for your pot pies.
  6. Add Sauce: Spoon about 2 tablespoons of marinara or pizza sauce into the bottom of each dough-lined ramekin, spreading evenly.
  7. Layer Cheese: Sprinkle 2-3 tablespoons of shredded mozzarella cheese over the sauce for a cheesy base layer.
  8. Add Toppings: Place a few slices of pepperoni or your choice of toppings on top of the mozzarella layer.
  9. Season Filling: Sprinkle grated Parmesan cheese, dried oregano, dried basil, garlic powder, and optional red pepper flakes over the toppings for added flavor.
  10. Top and Seal: Add more shredded mozzarella cheese on top, then fold the overhanging dough over the filling partially to cover the pie.
  11. Brush with Olive Oil: Optionally brush the tops of the pot pies with olive oil to achieve a beautiful golden crust when baked.
  12. Bake: Place the ramekins on a baking sheet and bake in the preheated oven for 25 minutes or until the dough is golden brown and the cheese is melted and bubbly.
  13. Cool and Serve: Allow the pot pies to cool for 5 minutes before serving hot. Serve with extra marinara sauce for dipping if desired.

Notes

  • You can customize the toppings with your favorite pizza ingredients like sausage, mushrooms, bell peppers, or olives.
  • If you prefer a dairy-free version, substitute mozzarella and Parmesan with vegan cheese alternatives.
  • Use homemade pizza dough for a fresher taste, but refrigerated dough works perfectly for convenience.
  • Brushing the dough with olive oil enhances browning but can be skipped if you want a lighter crust.
  • Make sure your ramekins are oven-safe and not too large to ensure the filling is fully cooked.
  • Letting the pot pies rest for a few minutes after baking helps the filling set, making them easier to eat.
