These Sweet Potato Brownies are a delicious, healthier twist on classic brownies, using natural sweetness from sweet potatoes and honey or maple syrup. They combine the rich flavors of cocoa and peanut butter with the moist texture of mashed sweet potatoes, creating a guilt-free treat perfect for any occasion.

Ingredients

Main Ingredients

  • ½ cup sweet potato puree (about 1 medium sweet potato, cooked and mashed)
  • ½ cup peanut butter
  • 1/3 cup unsweetened cocoa powder
  • 1/3 cup honey or maple syrup
  • 2 large eggs
  • ¼ tsp salt
  • ½ tsp baking powder
  • ½ cup all-purpose flour (or gluten-free flour)
  • ½ cup white chocolate chips

Instructions

  1. Preheat and Prepare Pan: Set your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper to make removing the brownies easier.
  2. Cook and Mash Sweet Potato: Cook the sweet potato by steaming, boiling, or baking it until tender, then mash until smooth to create the puree needed for the batter.
  3. Mix Wet Ingredients: In a large bowl, combine the sweet potato puree, peanut butter, honey or maple syrup, and eggs. Mix until the mixture is smooth and creamy.
  4. Add Dry Ingredients: Add the cocoa powder, all-purpose flour, salt, and baking powder to the wet ingredients. Stir just until combined to avoid overmixing.
  5. Add Chocolate Chips: Gently fold in the white chocolate chips to distribute them evenly throughout the batter.
  6. Pour Batter and Bake: Pour the batter into the prepared baking dish and spread it evenly. Bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool and Serve: Let the brownies cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before cutting into squares.

Notes

  • You can substitute peanut butter with almond butter or sunflower seed butter for a different flavor or allergy needs.
  • Using gluten-free flour makes this recipe suitable for gluten-free diets.
  • Sweetness can be adjusted by varying the amount of honey or maple syrup.
  • For a vegan version, replace eggs with flax eggs and use maple syrup instead of honey.
  • Allow brownies to cool completely to ensure clean cuts and best texture.
