A flavorful and easy one-pot recipe featuring succulent lemon garlic shrimp and tender asparagus. Cooked together with aromatic garlic, a hint of red pepper flakes, and brightened with fresh lemon juice and zest, this dish is perfect served over rice or quinoa for a quick and satisfying meal.

Ingredients

Main Ingredients

  • 1 tablespoon olive oil
  • 1 pound shrimp, peeled and deveined
  • Salt and pepper, to taste
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup chicken broth
  • 1 lemon, juiced and zested

For Serving

  • 1 cup cooked rice or quinoa
  • Fresh parsley, for garnish

Instructions

  1. Cook Shrimp: Heat olive oil in a large pot over medium-high heat. Season shrimp with salt and pepper, then add to the pot. Cook for 3 minutes until pink and cooked through. Remove shrimp from the pot and set aside.
  2. Sauté Asparagus and Garlic: In the same pot, add asparagus, garlic, and red pepper flakes if using. Sauté for 4 minutes until asparagus is tender but still crisp.
  3. Add Broth and Lemon: Pour in chicken broth along with lemon juice and zest. Bring the mixture to a simmer, allowing the flavors to combine.
  4. Combine Shrimp and Heat Through: Return the cooked shrimp to the pot and cook for an additional 2 minutes until everything is heated through and well mixed.
  5. Serve: Spoon the shrimp and asparagus mixture over cooked rice or quinoa. Garnish with fresh parsley before serving for a burst of color and freshness.

Notes

  • For a vegetarian version, substitute shrimp with tofu or chickpeas and use vegetable broth instead of chicken broth.
  • Adjust red pepper flakes according to your heat preference or omit for a milder dish.
  • Use fresh lemon juice and zest for the best citrus flavor.
  • Leftover cooked rice or quinoa can save time when preparing this meal.
  • Make sure shrimp are peeled and deveined for the best texture and taste.
