A delicious and low-carb Keto Shrimp and Cauliflower Grits Casserole combining creamy cauliflower 'grits' with spicy Cajun shrimp, topped with melted cheddar cheese. Perfect for a comforting dinner that's both nutritious and satisfying.

Ingredients

Cauliflower Grits

  • 1 large head of cauliflower, cut into florets
  • 1 cup heavy cream
  • 1/4 cup cream cheese, softened
  • Salt and pepper to taste

Shrimp Mixture

  • 1 pound shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Topping

  • 1 cup shredded cheddar cheese
  • Green onions for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius) to prepare for baking the casserole.
  2. Prepare Cauliflower Grits: Steam or boil the cauliflower florets until tender, about 7 minutes. Drain well and blend them with heavy cream, cream cheese, salt, and pepper until smooth to create creamy cauliflower grits.
  3. Cook Shrimp: In a skillet, heat olive oil over medium heat. Add minced garlic and shrimp, cooking until the shrimp turns pink and is cooked through, approximately 3-5 minutes. Season with Cajun seasoning, salt, and pepper to taste.
  4. Assemble Casserole: Grease a 9x13-inch baking dish. Spread the cauliflower grits evenly as the base layer, then layer the cooked shrimp mixture on top. Sprinkle shredded cheddar cheese evenly over the top.
  5. Bake: Bake the casserole in the preheated oven for 25 minutes or until the cheese is melted, bubbly, and slightly golden.
  6. Garnish and Serve: Remove from oven, garnish with chopped green onions if desired, and serve hot.

Notes

  • Ensure the cauliflower is well-drained before blending to avoid watery grits.
  • You can substitute heavy cream with full-fat coconut milk for a dairy-free version.
  • Adjust the Cajun seasoning quantity to suit your preferred spice level.
  • Use frozen shrimp if fresh is unavailable, thawing completely before cooking.
  • For extra creaminess, stir some shredded cheese into the cauliflower grits before layering.
