Ingredients

Chicken

  • 4 bone-in chicken thighs

Vegetables & Aromatics

  • 1 bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced

Tomato Sauce

  • 1 can (14 oz) crushed tomatoes (no sugar added)

Seasonings

  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken: Place the bone-in chicken thighs in the crockpot and season them evenly with salt, black pepper, dried oregano, dried basil, and red pepper flakes if using.
  2. Add vegetables and sauce: Layer the sliced bell pepper, sliced onion, minced garlic, and crushed tomatoes on top of the seasoned chicken thighs in the crockpot.
  3. Cook: Cover the crockpot and cook on low temperature for 6-7 hours, or on high temperature for 3-4 hours, until the chicken is fully cooked, tender, and the flavors have melded together.
  4. Garnish and serve: Once done, serve the chicken cacciatore hot, garnished with fresh basil leaves for a burst of fresh herb flavor.

Notes

  • For a spicier dish, increase the amount of red pepper flakes or add a pinch of cayenne pepper.
  • You can substitute bone-in chicken thighs with boneless thighs or chicken breasts, but adjust cooking time accordingly.
  • Use no sugar added crushed tomatoes to keep the recipe keto-friendly.
  • This dish pairs well with cauliflower rice or zucchini noodles for a complete keto meal.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop or microwave.
