This Italian Grinder Salad Sandwich is a delicious and easy-to-make recipe featuring a flavorful grinder salad layered with salami, pepperoni, turkey, and provolone cheese on fresh sub rolls. Topped with sliced tomato and broiled to melt the cheese, it’s a perfect combination of savory deli meats, creamy mayonnaise-based salad, and crisp vegetables, making it a satisfying meal or hearty lunch option.

Ingredients

Grinder Salad

  • 1/2 cup mayonnaise
  • 1/2 head iceberg lettuce (shredded)
  • 1/2 red onion (thinly sliced)
  • 1/3 cup banana peppers (sliced)
  • 1 tsp red wine vinegar
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Sandwich Assembly

  • 3 sub rolls
  • 1/4 pound salami
  • 1/4 pound pepperoni
  • 1/4 pound turkey
  • 1/4 pound provolone cheese
  • 1 tomato (sliced)

Instructions

  1. Prepare the grinder salad. In a large bowl, mix mayonnaise, red wine vinegar, garlic powder, oregano, salt, and pepper until well combined. Stir in shredded iceberg lettuce, thinly sliced red onion, and sliced banana peppers until the salad is evenly coated and mixed.
  2. Assemble the sandwiches. Slice each sub roll open and layer salami, pepperoni, turkey, and provolone cheese evenly inside each roll.
  3. Broil the sandwiches. Preheat your oven's broiler. Place the assembled sandwiches on a baking sheet and broil for 2 to 3 minutes until the cheese melts and begins to bubble.
  4. Add tomato slices and grinder salad. Remove the sandwiches from the oven and top each with sliced tomato. Spoon a generous amount of the prepared grinder salad over the tomato slices.
  5. Close and serve. Gently close the sandwiches, pressing slightly to hold the filling. Cut each sandwich in half if desired, and serve immediately for the best fresh flavor and texture.

Notes

  • For a tangier salad, add an extra 1/2 teaspoon of red wine vinegar.
  • Use fresh sub rolls for the best texture; toasting the rolls slightly before assembling can add extra crunch.
  • Feel free to substitute turkey with ham or roast beef for variety.
  • To make it spicier, add sliced jalapenos or use pepper jack cheese instead of provolone.
  • If broiler is unavailable, melt the cheese under a hot grill or in a toaster oven for similar results.
