A flavorful twist on classic overnight oats inspired by Indian spices and ingredients, combining rolled oats, cardamom, saffron, and crunchy pistachios for a delicious and nutritious breakfast.

Ingredients

Base Ingredients

  • 1 cup rolled oats
  • 1 cup full fat milk
  • 2 tablespoons sugar
  • 2 teaspoons chia seeds
  • ¼ teaspoon cardamom powder
  • 1 pinch salt
  • 1 pinch crushed saffron

Toppings

  • 3 tablespoons raw pistachios, chopped

Instructions

  1. Combine Ingredients: In a mason jar or suitable container, mix together the rolled oats, full fat milk, sugar, chia seeds, cardamom powder, salt, and crushed saffron. Stir well to ensure all ingredients are evenly incorporated.
  2. Refrigerate Overnight: Cover the jar or container tightly and place it in the refrigerator. Allow the oats to soak and flavors to meld for at least 6 hours, preferably overnight, or up to 2 days for convenience.
  3. Add Pistachios and Adjust Sweetness: Before serving, stir in half of the chopped pistachios. Taste the oats and if you prefer the sweetness to be stronger, add more sugar accordingly and mix well.
  4. Serve: Enjoy your Indian-inspired overnight oats topped with the remaining chopped pistachios for an added crunchy texture and nutty flavor.

Notes

  • Full fat milk enhances creaminess, but you can substitute with almond or oat milk for a dairy-free option.
  • Saffron is potent; crush finely and use sparingly to avoid overpowering the dish.
  • Chia seeds add fiber and help thicken the oats overnight.
  • Adjust sugar to taste; start with less and add more if desired.
  • Refrigerate for up to 2 days, but best texture is achieved after overnight soaking.
