Ingredients

Chicken Marinade

  • 1 pound boneless skinless chicken breasts, diced

Instructions

  1. Prepare Marinade: In a medium bowl, whisk together olive oil, lime juice and zest, honey, minced garlic, chili powder, salt, and pepper. Add the diced chicken and stir to coat evenly. Cover and let it marinate for at least 20 minutes or up to 2 hours in the fridge.
  2. Cook Chicken: Heat a skillet over medium-high heat. Once hot, add the chicken along with the marinade and sauté until golden and fully cooked, about 8 minutes. The chicken is done when the outside is lightly caramelized and the inside is tender.
  3. Prepare Rice: While the chicken cooks, mix cooked jasmine or basmati rice with lime juice, chopped cilantro, and a pinch of salt. Fluff gently with a fork and set aside.
  4. Prepare Avocado: In a small bowl, toss the diced avocado with lime juice, salt, and pepper. You can leave the avocado in chunks or lightly mash it for a creamier texture.
  5. Assemble Stack: Using a round mold or small bowl, layer the lime cilantro rice on the bottom, followed by the avocado layer, then top with the honey lime chicken. Press gently to set the shape, then carefully lift the mold.
  6. Garnish and Serve: Sprinkle extra cilantro or sliced green onions on top of the stack. Add a lime wedge on the side for extra zing and serve immediately. This dish pairs well with a side salad or a chilled sparkling water with lime.
