  • 1 1/2 cups berries (fresh or frozen - blueberries, raspberries, cherries)
  • 1 tsp lemon zest (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease your baking dish with cooking spray or line it with parchment paper to prevent sticking.
  2. Blend Cottage Cheese: Add the full fat cottage cheese to a blender and blend until it becomes smooth, silky, and creamy.
  3. Add Remaining Ingredients: To the blender, add the eggs, sweetener of your choice, vanilla extract, cornstarch (or keto-friendly coconut flour), and optional lemon zest. Blend the mixture until smooth and well combined, approximately 30 seconds.
  4. Prepare Baking Dish: Pour the cottage cheese mixture into the prepared baking dish and spread it evenly.
  5. Initial Bake: Bake in the preheated oven for 15 minutes, just until the edges start to set gently. The center should remain soft and slightly wobbly.
  6. Add Berries: Carefully remove the dish from the oven and sprinkle the berries evenly over the partially set clafoutis. The berries will sink slightly into the batter.
  7. Final Bake: Return the dish to the oven and bake for an additional 35 minutes until the top is golden and the center jiggles slightly. The edges will puff gently indicating perfect doneness.
