Ingredients

For the Wraps:

  • 4 low-carb wraps
  • 3/4 cup shredded lettuce
  • 12 bacon strips, cooked until crispy and crumbled

For the Tomato Marinade:

  • 2 tbsp red wine vinegar
  • Salt to taste
  • 3 large beefsteak tomatoes, thinly sliced
  • 1/4 cup olive oil (Pompeian extra virgin olive oil preferred)
  • Black pepper to taste (freshly ground)

For the Secret Sauce:

  • 1/4 cup mayonnaise (Hellmann’s mayonnaise preferred)

Instructions

  1. Cook the Bacon: In a skillet over medium heat, fry the bacon strips until they are crispy and golden brown. Then remove them from the skillet and place on a paper towel-lined plate to drain any excess grease.
  2. Prepare the Tomato Marinade: While the bacon cooks, slice the beefsteak tomatoes into thin halves lengthwise. Gently turn the tomato slices in the mixture to evenly coat each side with the marinade.
