Bread
2 slices thick, good quality white bread (crusty French loaf recommended)
Cheese
2 oz goat cheese, crumbled
2 oz white cheddar cheese, shredded (or shredded mozzarella as an alternative)

2 tablespoons liquid honey, divided
1/8 teaspoon red pepper flakes (adjust to taste)
Instructions
Infuse Butter: Melt the butter in a large saucepan over medium-low heat together with the red pepper flakes. Let it cook for about five minutes, taking care not to burn the butter, so it becomes infused with the spicy flavor.
Prepare Butter for Bread: Carefully transfer the melted butter infused with red pepper flakes into a small bowl. Set the pan aside without washing it, as it will be used again for cooking the sandwich.
Butter the Bread: Using a pastry brush or the back of a spoon, spread the infused butter on one side of both slices of bread. You may not need all of the butter for this step.
Assemble Sandwich: Heat the reserved pan over medium heat. Place one slice of bread, buttered-side down, in the pan. Layer the crumbled goat cheese and shredded white cheddar evenly over the bread. Drizzle one tablespoon of honey on top of the cheese. Cover with the second slice of bread, buttered side facing out, to complete the sandwich.
Cook Sandwich: Cover the pan with a lid to help the cheese melt. Cook the sandwich for about 5 to 7 minutes or until the bottom slice is golden brown and toasted and the cheese has melted completely.
Finish and Serve: Remove the sandwich from the pan. Drizzle the remaining tablespoon of honey on top. If there are any leftover red pepper flakes in the pan, sprinkle some on the sandwich before serving for additional flavor. Slice and enjoy your gooey, spicy, and sweet grilled cheese.
