Deliciously spiced gingerbread cookies with a soft and chewy texture, perfect for festive occasions and holiday baking. These classic cookies are flavored with warm spices like ginger, cinnamon, and cloves, sweetened with molasses and brown sugar, and baked to golden perfection.

Ingredients

Cookie Dough

  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • 3 cups all-purpose flour
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper to prevent sticking.
  2. Cream Butter and Sugar: In a large bowl, cream together the softened butter and brown sugar until the mixture is light and fluffy, ensuring even sweetness and texture.
  3. Add Wet Ingredients: Beat in the molasses and the large egg until fully combined, creating a smooth batter.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, ground ginger, ground cinnamon, ground cloves, baking soda, and salt to evenly distribute the spices and leavening.
  5. Combine Wet and Dry: Gradually add the dry ingredient mixture to the wet ingredients, mixing until a cohesive dough forms.
  6. Roll Out Dough: On a floured surface, roll out the dough to about 1/4-inch thickness, making it easy to cut shapes while maintaining a tender texture.
  7. Cut Shapes: Use cookie cutters to cut the dough into desired shapes and place them on the prepared baking sheets, spaced evenly apart.
  8. Bake: Bake the cookies in the preheated oven for 10 minutes, or until the edges are set and the cookies have a slight golden hue.
  9. Cool: Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely, preparing them for decorating or serving.

Notes

  • Make sure the butter is softened to room temperature for easier creaming and better texture.
  • Rolling the dough between parchment paper can prevent sticking and make cleanup easier.
  • For extra flavor, consider adding a pinch of nutmeg or allspice to the spice mix.
  • Store baked cookies in an airtight container at room temperature for up to one week.
  • These cookies can be decorated with royal icing, powdered sugar, or left plain.
  • If dough is too sticky, chill it in the refrigerator for 30 minutes before rolling out.
