Instructions

  1. Prepare Potatoes: Grate the peeled russet potatoes and rinse them thoroughly under cold water to remove excess starch, then squeeze them dry using a clean kitchen towel or paper towels to ensure they crisp up properly.
  2. Cook Hash Browns: Heat the butter and oil in a large skillet over medium heat. Add the grated potatoes, spreading them into an even layer and pressing down lightly. Season with salt and black pepper. Cook without disturbing for 7 minutes until the bottom is golden and crispy. Flip in sections if needed and cook the other side until crispy as well.
  3. Add Cheese: Sprinkle shredded cheddar cheese evenly over the hot hash browns so it melts perfectly into the potatoes.
  4. Top with Extras: Add the crumbled cooked bacon, cooked eggs (fried or scrambled based on preference), and sliced green onions on top of the melted cheese layer. Dollop sour cream or mayonnaise over the top.
  5. Optional Toppings: If desired, finish with jalapeños, avocado slices, hot sauce, or chives to add extra flavor and spice.
  6. Serve: Serve the fully loaded hash browns immediately while the bottom remains crispy and the toppings are warm and melty.
