Creamy Tuscan Chicken is a flavorful Italian-inspired dish featuring juicy pan-seared chicken breasts smothered in a rich sauce made with sun-dried tomatoes, spinach, heavy cream, and Parmesan cheese. Perfect for a comforting dinner served with pasta or crusty bread to soak up the luscious sauce.

Ingredients

Main Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Sauce Ingredients

  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning

Instructions

  1. Cook the Chicken: Season the chicken breasts with salt and pepper. In a skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 7 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
  2. Make the Sauce: In the same skillet, add the chopped sun-dried tomatoes and spinach. Cook until the spinach is wilted, about 2 minutes. Pour in the heavy cream, then stir in the grated Parmesan cheese and Italian seasoning. Simmer the sauce for 3-4 minutes until it thickens slightly.
  3. Combine: Return the cooked chicken breasts to the skillet and spoon the creamy sauce over the top. Cook for an additional 2-3 minutes to heat everything through and allow the flavors to meld.
  4. Serve: Plate the creamy Tuscan chicken and serve hot with pasta, rice, or crusty bread to soak up the delicious sauce.

Notes

  • Use full-fat heavy cream for the richest sauce; light cream will make the sauce thinner.
  • Sun-dried tomatoes packed in oil add extra flavor and moisture, but if using dry ones, rehydrate them in hot water first.
  • Fresh spinach can be substituted with baby spinach or frozen spinach (thawed and drained).
  • For a lower-fat version, substitute heavy cream with half-and-half or coconut cream for a dairy-free alternative.
  • Make sure the chicken is cooked through to an internal temperature of 165°F (74°C) for safety.
