Instructions

Drain Excess Fat: Drain all but 1 tablespoon of bacon fat from the pan, reserving the fat for other uses or discarding it. Leaving a tablespoon adds flavor to the fried rice.
Cook the Eggs: Lower the heat to medium-low and add the scrambled eggs. Gently move the eggs around the pan with a spatula until fully cooked but still slightly soft, about 2 minutes, to avoid dryness or rubberiness.
Add Rice and Green Onions: Add the cooked rice and sliced green onions to the pan. Break up any clumps of rice gently and cook while stirring frequently until heated through, about 5 minutes.
