Instructions

  1. Cook the Bacon: In a nonstick skillet or well-seasoned cast iron pan, cook the diced bacon over medium heat until crispy and golden brown, about 6 minutes. Stir occasionally to ensure even cooking and proper fat rendering.
  2. Drain Excess Fat: Drain all but 1 tablespoon of bacon fat from the pan, reserving the fat for other uses or discarding it. Leaving a tablespoon adds flavor to the fried rice.
  3. Cook the Eggs: Lower the heat to medium-low and add the scrambled eggs. Gently move the eggs around the pan with a spatula until fully cooked but still slightly soft, about 2 minutes, to avoid dryness or rubberiness.
  4. Add Rice and Green Onions: Add the cooked rice and sliced green onions to the pan. Break up any clumps of rice gently and cook while stirring frequently until heated through, about 5 minutes.
  5. Season and Serve: Taste and season with salt and pepper generously as needed. Divide the fried rice between two plates, garnish with hot sauce if desired, and serve immediately while hot.
