Ingredients

Chicken

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour

Sauce

  • 4 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup Marsala wine
  • 1/2 cup chicken broth
  • 2 tablespoons unsalted butter
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the Chicken: Season the chicken breasts evenly with salt and pepper. Dredge them in all-purpose flour, shaking off any excess flour to ensure a light coating.
  2. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the floured chicken breasts and cook for about 5 minutes on each side until they develop a golden brown crust and are cooked through. Remove the chicken from the skillet and set aside on a plate.
  3. Sauté the Mushrooms: In the same skillet, add the sliced mushrooms and minced garlic. Cook for about 5 minutes, stirring occasionally, until the mushrooms are browned and tender.
  4. Make the Sauce: Pour the Marsala wine and chicken broth into the skillet with the mushrooms, scraping the bottom of the pan to release any browned bits. Bring the mixture to a simmer and cook for about 5 minutes until the sauce slightly thickens. Stir in the unsalted butter until it fully melts and the sauce becomes glossy.
  5. Combine and Serve: Return the cooked chicken breasts to the skillet, spooning the mushroom and Marsala sauce over the top to coat. Garnish with chopped fresh parsley and serve immediately with your choice of pasta or mashed potatoes.
