Ingredients

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

For the Cheesecake Layer:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

For the Apple Topping:

  • 2 large apples, peeled, cored, and chopped
  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 2 tbsp unsalted butter

  • 1/4 cup brown sugar
  • 1/4 cup cold butter, cubed

Instructions

  1. Prepare the crust: Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press the mixture firmly into the bottom of a greased 9×9-inch baking pan. Bake for 10 minutes, then set aside to cool.
  2. Make the cheesecake layer: In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla and sour cream until fully combined. Pour over the cooled crust and spread evenly.
  3. Prepare the apple topping: In a skillet over medium heat, melt butter. Add chopped apples, sugar, cinnamon, and lemon juice. Cook for 7 minutes, stirring occasionally, until apples are soft but still hold shape. Let cool slightly.
