A savory brunch bagel recipe featuring a garlic herb butter spread, layers of cheddar cheese, Italian salami, and prosciutto, crowned with a baked egg in the center for a deliciously hearty and flavorful meal.

Ingredients

Bagel Assembly

  • 4 bagels
  • 4 slices cheddar cheese
  • 4 slices prosciutto
  • 4 slices Italian salami
  • 4 eggs

Garlic Herb Butter

  • 1 ½ tbsp salted butter
  • 1 garlic clove
  • ½ tsp dried oregano
  • ½ tsp chili paprika
  • A few sprigs fresh parsley
  • Salt, to taste

Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C). You may also use a fan oven or air fryer if preferred for baking the bagels.
  2. Prepare garlic butter: In a blender, combine the garlic, fresh parsley, salted butter, dried oregano, chili paprika, and a pinch of salt. Blend until the mixture is smooth and creamy.
  3. Spread butter and layer meats and cheese: Evenly spread the garlic herb butter over each bagel half. On each, layer one slice of cheddar cheese, followed by a slice of Italian salami, then a slice of prosciutto.
  4. Create egg well: Carefully make a small hole in the center of the prosciutto layer on each bagel. Crack an egg into each hole, allowing the egg white to spread slightly but remaining contained.
  5. Season and bake: Lightly sprinkle additional chili paprika and salt over each bagel. Place the bagels on a baking sheet and bake in the preheated oven for 16 minutes, or until the eggs are fully set and the prosciutto turns crispy and golden brown.
  6. Rest and garnish: Remove the bagels from the oven and let them cool for 3 minutes. Garnish with freshly chopped parsley before serving to enhance flavor and presentation.

Notes

  • Use day-old bagels for better texture and to prevent sogginess.
  • If you prefer less spicy dishes, reduce chili paprika or omit it altogether.
  • For extra crispiness, broil for 1-2 minutes at the end of baking, watching carefully to avoid burning.
  • Feel free to substitute cheddar with mozzarella or your favorite melting cheese.
  • Ensure eggs are fresh for best flavor and appearance when baked inside the bagels.
