Pavê is a classic Brazilian trifle dessert featuring layers of coffee-soaked ladyfinger cookies, creamy cocoa-infused milk mixture, and whipped cream, garnished with grated chocolate. This no-bake dessert is perfect for parties and special occasions, offering a delightful combination of flavors and textures.

Ingredients

Cream Layer

  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Milk Mixture

  • 1 can sweetened condensed milk (about 14 oz)
  • 1 can evaporated milk (about 12 oz)
  • 1/2 cup whole milk
  • 1/4 cup cocoa powder

Other Ingredients

  • 1 package ladyfinger cookies (about 200 g)
  • 1/2 cup strong coffee, cooled
  • Grated chocolate for garnish (about 1/4 cup)

Instructions

  1. Whip the Cream: In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract using an electric mixer or whisk until stiff peaks form. Set this whipped cream aside for layering.
  2. Prepare Milk Mixture: In another bowl, combine the sweetened condensed milk, evaporated milk, whole milk, and cocoa powder. Mix well until all ingredients are fully incorporated into a smooth chocolate cream.
  3. Soak Ladyfingers: Dip the ladyfinger cookies briefly into the cooled strong coffee, making sure they are moistened but not soggy, then arrange a layer of soaked ladyfingers at the bottom of a trifle dish or large serving bowl.
  4. First Layer Assembly: Pour a layer of the prepared milk mixture over the arranged ladyfingers, spreading it evenly to cover the cookies.
  5. Add Whipped Cream: Add a layer of the whipped cream over the milk mixture, smoothing it out gently.
  6. Repeat Layers: Continue layering the coffee-soaked ladyfingers, milk mixture, and whipped cream until all ingredients are used, ensuring the top layer finishes with whipped cream.
  7. Garnish: Sprinkle grated chocolate over the final whipped cream layer to decorate and add texture.
  8. Chill: Refrigerate the assembled pavê for at least 4 hours, preferably overnight, to allow the flavors to meld and the dessert to set before serving.

Notes

  • Use freshly brewed strong coffee cooled to room temperature for the best flavor when soaking the ladyfingers.
  • Be careful not to soak the ladyfingers too long to prevent them from becoming too soggy and falling apart.
  • For a lighter version, substitute heavy cream with whipping cream or a whipped topping alternative.
  • You can add a splash of coffee liqueur to the coffee soak for an adult twist.
