Ingredients

Chia Pudding

  • 1/4 cup chia seeds
  • 1 cup unsweetened soy milk
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract

Blueberry Yogurt

  • 1 cup vegan yogurt (unsweetened or vanilla-flavored)
  • 1/2 cup fresh blueberries (for mixing with yogurt)

Topping

  • 1/2 cup fresh blueberries (for topping)

Instructions

  1. Prepare Chia Pudding: In a bowl, combine the chia seeds, soy milk, maple syrup, and vanilla extract. Stir well to fully incorporate all ingredients. Let the mixture rest for 5 minutes, then stir again to prevent chia seeds from clumping together. Cover and refrigerate for at least 2 hours or overnight until the pudding thickens to a creamy consistency.
  2. Make Blueberry Yogurt: In a blender or using a hand blender, blend half of the fresh blueberries with the vegan yogurt until smooth and well combined. Adjust texture as desired.
  3. Assemble the Pudding: In serving cups, spoon a layer of the blended blueberry yogurt on the bottom, followed by a layer of the chilled chia pudding. Top with the remaining fresh blueberries for garnish and added texture.
