A comforting Beef and Potato Casserole layered with seasoned ground beef, tender sliced potatoes, and a creamy mushroom sauce, topped with melted cheddar cheese. Perfect for a hearty family dinner.

Ingredients

Beef Mixture

  • 1 pound ground beef
  • 1 onion, chopped

Potatoes

  • 4 medium potatoes, thinly sliced

Sauce

  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Topping

  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) to prepare for baking the casserole.
  2. Cook Beef and Onion: In a skillet over medium heat, brown the ground beef along with the chopped onion until the beef is cooked through and the onion is softened. Drain any excess fat from the skillet.
  3. Prepare Sauce: In a mixing bowl, combine the cream of mushroom soup, milk, garlic powder, paprika, salt, and pepper. Mix thoroughly to create a smooth sauce.
  4. Layer Ingredients: Lightly grease a 9x13-inch baking dish. Layer half of the thinly sliced potatoes on the bottom, then spread the cooked ground beef and onion mixture evenly over the potatoes, followed by the remaining potato slices on top.
  5. Add Sauce and Cover: Pour the prepared mushroom sauce evenly over the assembled layers in the baking dish. Cover the dish tightly with aluminum foil.
  6. Bake Covered: Place the casserole in the preheated oven and bake for 1 hour so the potatoes cook through and flavors meld together.
  7. Add Cheese and Finish Baking: Remove the foil carefully, sprinkle the shredded cheddar cheese evenly over the top, and return the dish to the oven. Bake uncovered for an additional 15 minutes until the cheese is melted, bubbly, and golden brown.
  8. Serve: Remove from the oven and let it rest for a few minutes before serving to allow the casserole to set.

Notes

  • Use Yukon Gold or Russet potatoes for best texture and flavor.
  • For a richer sauce, substitute half the milk with heavy cream.
  • You can add chopped garlic or herbs like thyme to the beef mixture for extra flavor.
  • Make sure to slice the potatoes thinly to ensure they cook fully within the baking time.
  • Leftovers keep well refrigerated for up to 3 days and reheat nicely in the oven.
