Ingredients

Salmon and Cheese

  • 4 salmon fillets (6 oz each)
  • 1 (5.2 oz) package Boursin Garlic & Fine Herbs cheese

Seasonings and Garnish

  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • Zest of ½ lemon
  • Juice of ½ lemon
  • Salt, to taste
  • Black pepper, to taste
  • 1 tbsp fresh parsley, chopped (optional)

  • Cherry tomatoes or asparagus (optional, for roasting alongside)

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C). Lightly oil a baking dish or line it with parchment paper for easy cleanup.
  2. Season the salmon: Pat the salmon fillets dry with paper towels and place them skin-side down in the prepared baking dish. Drizzle each fillet with olive oil, then sprinkle with salt, black pepper, minced garlic, and lemon zest.
  3. Add the Boursin cheese: Break the Boursin Garlic & Fine Herbs cheese into chunks and evenly distribute them on top of each salmon fillet.
  4. Bake the salmon: Place the baking dish in the oven and bake for 18 minutes, or until the salmon is opaque and flakes easily with a fork. For a golden, slightly crisp top, broil the salmon for 2 minutes at the end, watching carefully to prevent burning.
