A comforting and classic Apple Crisp featuring a spiced apple filling topped with a buttery oat crumble, baked to golden perfection and served warm with creamy vanilla ice cream and optional caramel sauce.

Ingredients

For the Filling:

  • 6 medium apples (mix of Granny Smith and Honeycrisp), peeled, cored, and thinly sliced (about 900 g total)
  • 1/4 cup granulated sugar (50 g)
  • 1/4 cup light brown sugar (50 g)
  • 1 tsp ground cinnamon (2 g)
  • 1/2 tsp ground nutmeg (1 g)
  • 1/4 tsp ground allspice (0.5 g)
  • 2 tbsp fresh lemon juice (30 ml)
  • 1 tbsp cornstarch (8 g)

For the Topping:

  • 1 cup old-fashioned oats (100 g)
  • 1/2 cup all-purpose flour (65 g)
  • 1/2 cup light brown sugar, packed (100 g)
  • 1/4 cup granulated sugar (50 g)
  • 1/2 tsp ground cinnamon (2 g)
  • 1/4 tsp salt (1.5 g)
  • 1/2 cup (1 stick) unsalted butter, cold and cubed (115 g)
  • 1/2 cup chopped pecans or walnuts (optional) (60 g)

To Serve:

  • Vanilla ice cream (quantity as desired)
  • Caramel sauce (optional, quantity as desired)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish or similar oven-safe dish to prevent sticking.
  2. Prepare the Filling: In a large bowl, combine the peeled, cored, and thinly sliced apples with granulated sugar, light brown sugar, ground cinnamon, ground nutmeg, ground allspice, fresh lemon juice, and cornstarch. Toss everything together thoroughly until the apples are evenly coated with the mixture.
  3. Transfer the Filling: Pour the apple mixture into the prepared baking dish and evenly spread it out to form a uniform layer.
  4. Make the Topping: In a medium bowl, mix old-fashioned oats, all-purpose flour, light brown sugar, granulated sugar, ground cinnamon, and salt. Add the cold, cubed unsalted butter and use a pastry cutter or your fingers to work it into the dry ingredients until the mixture resembles coarse crumbs. Stir in chopped pecans or walnuts if using.
  5. Assemble the Crisp: Sprinkle the prepared topping evenly over the apple mixture in the baking dish, ensuring the entire surface is covered.
  6. Bake the Crisp: Bake in the preheated oven for 40 minutes, or until the topping is golden brown and the apples are tender when pierced with a fork.
  7. Cool Slightly: Remove the apple crisp from the oven and let it cool for 5 to 10 minutes, allowing the juices to settle and the crisp to thicken slightly.
  8. Serve: Serve warm by scooping portions into bowls and topping each with a scoop of vanilla ice cream and a drizzle of caramel sauce, if desired.

Notes

  • Use a mix of tart (Granny Smith) and sweet (Honeycrisp) apples for a balanced flavor.
  • Letting the crisp rest after baking helps the filling thicken and makes serving easier.
  • Chilled butter is essential for creating a crumbly, flaky topping texture.
  • Nuts can be omitted for a nut-free version or substituted with your favorite nuts.
  • Store leftovers covered in the refrigerator and reheat gently before serving.
