Ingredients

For the Muffins:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1.5 cups apples, peeled, cored, and diced (about 2 medium apples)

For the Crumb Topping:

  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar, packed
  • 1/2 tsp ground cinnamon
  • 1/4 cup unsalted butter, softened

Instructions

  1. Preheat oven and prepare muffin tin: Preheat your oven to 180°C (350°F). Line a muffin tin with paper liners or grease it with butter to prevent sticking.
  2. Mix dry ingredients for muffins: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon until evenly combined.
  3. Combine wet ingredients: In a separate bowl, mix the granulated sugar, brown sugar, melted unsalted butter, eggs, vanilla extract, and milk until the mixture is smooth and well combined.
  4. Combine wet and dry mixtures: Gradually add the dry ingredients into the wet ingredients, stirring gently until just combined. Be careful not to overmix to keep the muffins tender.
  5. Fold in apples: Gently fold in the peeled, cored, and diced apples to the batter evenly.
  6. Prepare crumb topping: In a small bowl, combine the flour, brown sugar, and ground cinnamon. Add the softened butter and mix with a fork or your fingers until the mixture looks like coarse crumbs.
  7. Fill muffin cups: Divide the muffin batter evenly among the prepared muffin cups, filling each about three quarters full to allow room for rising.
  8. Add crumb topping: Sprinkle the prepared crumb topping generously over each muffin to create a sweet, crunchy layer.
  9. Bake the muffins: Bake in the preheated oven for 22 minutes until a toothpick inserted into the center comes out clean and the tops are golden brown.
  10. Cool muffins: Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely for best texture and flavor.

Notes

  • Use tart apple varieties like Granny Smith for a tangy contrast or sweeter apples like Fuji for a milder flavor.
  • To keep muffins moist, avoid overmixing the batter as it can develop gluten making muffins tough.
  • If you prefer dairy-free, substitute milk with almond or oat milk and use a vegan butter alternative.
  • Crumb topping can be prepared in advance and stored in the fridge for convenience.
  • Muffins are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 3 days or frozen for longer storage.
